What is Canning?

Canning is a method to preserve food in jars at high temperatures for a long period of time, killing microorganisms and inactivates enzymes that could cause food to spoil. The heating process pushes air from the jar, creating a vacuum seal as food cools. When you heat up the filled, sealed jars, it causes the foods to expand and give up steam, pushing air out of the jars. When cooled, it forms a vacuum seal on the jar.

Two types of Canning -

Water bath canning. This method is a lower temperature canning process, ideal for high-acid foods and recipes. It is recommended for fruits, jams, jellies, salsa, tomatoes, pickles, chutneys, sauces, pie fillings, and condiments. Jars are filled with food, sealed loosely with a lid, then boiled completely covered in vigorously boiling water for a prescribed amount of time indicated by the tested recipe you are using.

Pressure canning. A pressure canner uses pressure to create temperatures well above boiling to effectively heat process low acid foods like meat, vegetables, beans and soups. When low acid foods are processed and sealed appropriately in a pressure canner, they’re shelf stable and can be stored on the pantry shelf for extended periods.

What jars are best for Canning?

Wide mouth Mason Ball jars are a staple in the kitchen! These high quality glass jars are a go-to option for people that do lots of Food preservation. The wide-mouth design is great for larger preserves like peaches or apple slices.

Another favourite is the Le Parfait Familia Wiss range! These glass jars are very popular for canning because they are great quality and have better functions compared to other jars. They differ from other models because the two-piece lid comes with a fully "capped" screw top instead of the traditional ring-style lids. The result is a more precise seal and components that don't warp or wear out as easily.

The Glass Weck Jars feature a timeless design made with high-quality German glass. Known for their three-piece glass lids, these jars offer a superior seal with the ability to stack jars for easy storage. Weck jars are a very high-quality and versatile set for canning with great longevity.
