Pickling and fermenting are great ways to preserve fruit and vegetables to eat at a later date. Pickling is the process of preserving or extending the shelf life of food, the pickling procedure typically affects the food's texture and flavour.

Do I need to sterilise jars for pickling?

Yes! Although to the naked eye the glass jars or bottles might appear clean, the presence of microscopic dust or bacteria is always a possibility and therefore you should always wash and sterilise glass jars and bottles if you intend to fill them with any kind of food or drink regardless of whether it is for personal consumption or for sale, this is also true for all caps.

There are three approaches to sterilising jars; in the oven, dishwasher or microwave. In all three cases you will need to wash your jars and lids first, removing any rubber seals or plastic caps before sterilising can begin. Note, sterilising should always take place simultaneously with cooking or preparing of food/drink so that you are filling your jars and bottles as soon as possible after sterilising.

Five tips when pickling…

  • -Watch out for bubbles! If there are bubbles in the container, air has got to it or there’s bacteria growing in it.
  • -Be adventurous with the spices you add!
  • -ALWAYS sterilize your glass jars before use!
  • -Always wipe the rim of the jar clean for a good seal after filling and just before putting the lid on.
  • -Label and date your jars and store them in a clean , cool, dark, dry place

Pickling salt 1 pound = 1–⅓ cup
Granulated sugar 1 pound = 2 cups
Brown sugar 1 pound = 2–¼ to 2–¾ cups, firmly packed
Fresh herbs 1 tablespoon = ½ teaspoon crushed dried herbs
