Hong Kong Beef XO Sauce

This is a traditional XO sauce, rich in umami flavours and perfect for Chinese cooking. You'll need fermented soybean paste (doenjang), fermented chilli paste (gochujang) and chicken powder, all of which you can buy online or from Asian grocers. For the gochujang, look for a Korean brand, as supermarket-own alternatives tend not to have the right flavour.

To make it, take 175 ml of vegetable oil and add half of it to a saucepan or wok on medium heat. Once it's hot, add 125g of very finely chopped lean steak and cook it until it is browned. Add 125 red chilli's, which you've made into a paste in a food processor. Cook the chilli and meat until the bubbles die down. Add 125 doenjang and mix it all well, then add 50g of gochujang. Stir in 50g of caster sugar and 2.5 tsp of chicken powder. Add the rest of the oil and then cook the sauce gently for up to ten minutes until it takes on a rich colour and dark, deep flavour. Stir in 25g of sesame seeds and 25g of chilli flakes and let the sauce cool.
