Using cheap jars to house your foraging finds Grab a cheap jar and take it on your foraging walks to save even more money. Midsummer is the ideal time to find fruits, vegetables, nuts and herbs in the countryside and coastline around you. Did you know that you can pickle green ash seeds? You pick the seeds when they are young and tender, boil them and then pickle them in a glass jar with vinegar, sugar and spices.

Elderflowers are also in season, and you can forage for bunches of these creamy white flowers with ease; they are perfect for making cordial and cocktails. Make your own cordial with the fresh flowers, experiment with liqueurs and cocktails, fry the flowers in batter or dry them for cupcake decorations. You may also be surprised that you can forage honeysuckle flowers and use just a few to flavour jams, jellies and drinks, and lime blossoms are wonderful baked into bread and cakes. Why not also gather wild garlic and make it into a delicious soup with fresh stock and a swirl of basil-flavoured oil?

Here's an easy recipe for elderflower cordial which could be fun to try with the kids:

Easy elderflower cordial

Forage for elderflower sprays and gather enough to fill a 2-pint measure when they are gently packed down. Shake them to remove any insects, but don't wash them as this damages their delicate flavour. Remove as many of the main stems as you can and cover the flowers with water and a little lemon zest before simmering gently for half an hour. Check that the liquid keeps covering the elderflowers, and top it up as needed. Let it cool, then strain the liquid through a towel or muslin. To every pint of liquid you gather, add the juice from half a lemon and 350g of sugar. Use a funnel to pour your cordial into sterilised, clean glass bottles or glass jars, seal them and keep your creation in the fridge where it will last easily for a few weeks.

Jam making

A cheap glass jar or two will also be invaluable if you are planning to make jams and jellies from your own 'grow your own' garden patch. Strawberries and gooseberries are already well in season, raspberries are ripening, and you may also be lucky to have blueberries, redcurrants, whitecurrants and tayberries to cook with. Decorate your jam jars with pretty fabric circles, ribbons and labels and even cheap glass jars will look beautiful.
