Making sauce in glass bottles

So with your glass supplies ready, now's the perfect time to have a go at making your own sauce. And a great one for this outdoor season has to be trusty BBQ sauce. This sauce recipe is easy to make, easy to store and you can adjust it to suit your preferences:

BBQ Sauce recipe

This recipe is by James Martin and it's very easy to make. You can find the full version on the BBC Good Food site:

To make it, you'll need to fry one finely chopped onion and three cloves of crushed garlic in some olive oil, with a finely chopped red chilli, a tsp of crushed fennel seeds and 55g of dark brown sugar. Add 50ml of dark soy sauce, 300ml of tomato ketchup and plenty of salt and pepper.

Taste to check that the ingredient proportions are absolutely delicious, and then bring the sauce to the boil for a few minutes so that all of the flavours combine. Let it cool and then decant the sauce into glass sauce bottles with a funnel. It makes a great dip or a marinade for chicken wings, sausages and spare ribs.

Sweet Raspberry Sauce recipe

If you've been growing your own raspberries this year, or have access to a local supply, why not make some delicious raspberry sauce for those easy summer desserts? This is another really simple recipe that results in a wonderful jewel-red coloured sauce that will positively glow in your glass sauce bottles.

You simply need around 400g of fresh raspberries, or frozen if those are easier, a tablespoon of water and 2 tsp of cornstarch to thicken the sauce slightly, plus 50g of granulated sugar and a teaspoon of lemon juice to balance out the sweetness of the berries. You can optionally add 1/2 teaspoon of vanilla extract if you wish.

To make the sauce, whisk the water and cornstarch together with a fork and then combine this with the berries, sugar and lemon juice in a small pan over a medium heat. Use a spatula or wooden spoon to stir the mixture and gently mash the berries as they warm up. Let the sauce come to a boil and simmer for three minutes and then sieve it if you wish before letting the sauce cool to thicken. Store in a glass bottle and use it to decorate ice cream, chocolate cheesecake or whatever takes your fancy.
