Delicious recipes to try

Slow-roasted lamb with jersey royals

Sunday roast is a family institution for a good reason. These delicious meals bring everyone together and allow us to enjoy slower cooking, real ingredients and traditional recipes that have been loved for years. This dish works perfectly with enamelware and it's simple, nutritious and flavoursome.

Choose a 5lb shoulder of lamb and rub it with olive oil and plenty of seasoning. Take your large enamel roasting tin - choose a deep-sided type - and arrange a sliced head of garlic, two sliced onions and a few springs of snipped rosemary in the base. Add 200ml of water and add the lamb on top before covering everything with kitchen foil.

Roast the lamb slowly at 170C (150C for a fan oven or gas 3) for three to four hours, checking it periodically and regularly basting it with juices from the tray. Remove the foil after the first two hours, and once the joint is cooled, remove it and allow the meat to rest.

Turn your attention to a pound of Jersey Royal or new potatoes. Add some sprigs of fresh mint, cover with water and then boil the potatoes for ten minutes or until tender, before draining them off. You can then make some mint sauce with fresh mint, a spoon or two of caster sugar or 100ml of white wine vinegar.

To serve this delicious feast, shred the lamb, pour on the juices and gravy and serve up with the mint sauce and potatoes. This meal will work wonderfully with seasonal vegetables and chunks of sourdough if your family are feeling particularly hungry!

Why not follow it up with a traditional rice pudding, slowly baked in the oven while the lamb is cooking? Served with a little compote, this is a wonderfully warming and traditional treat.
