​A Winter Recipe to try with Biopak

Vegetarian Chilli

This is a great recipe for making use of leftover vegetables and its beauty is that you can basically use whatever variations of veg you have to hand. It's also a really good way to boost your five a day, and for sneaking extra veg into your family's diet!

How to make it

Step 1

Heat two tablespoons of vegetable oil in a pan over a low to medium heat. Fry two chopped carrots, two chopped onions and two celery sticks with two teaspoons of dried mixed herbs, for around ten minutes. Stir every so often until the vegetables are soft, but not turning golden. If they do start to catch, just add a splash of water.

Step 2

Stir in one sliced red pepper and one sliced green pepper, along with two crushed garlic cloves. Cook these for another five minutes before sprinkling in a couple of teaspoons of chilli powder (according to your preference) and 2 teaspoons of sweet smoked paprika. At this point, turn the heat up a little and cook it for a minute while you stir. Add in a couple of teaspoons of tomato puree and cook everything for another minute before you add in a drained can of kidney beans, another of tinned tomatoes and 400ml of stock. If you'd like to add in any extra veg, do so at this stage. Chopped mushrooms, frozen sweetcorn and chunks of sweet potato all work very well.

Step 3:

Bring the chilli to the boil and then turn the heat down so that it simmers for around half an hour until the sauce thickens and the beans are tender. Season well and serve with whatever you fancy! We love rice, soured cream, grated cheese and a little fresh coriander.

Top tip: This is also an excellent recipe to make at leisure in your slow cooker. Simply add the ingredients, stir well and then let them gently cook for a few hours. The results will be incredibly tender and the smell will be delicious!
